Miloni Matar Mushroom

A delicious Awadhi dish using peas n mushroom...Chef Sanjeev Kapoor's style





 Serves - 4

Green Peas - 1 cup
Mushroom(halved n blanched) - 400gm
Onion(medium) - 1(chopped)
Cinnamon - 2 " pc
Green Cardamom - 3
Tomato (medium) - 1(chopped)
Tomato Puree - 1/4 cup
Spring onion(chopped) - 1/4cup
Green chilli - 2(chopped)
Ginger paste - 1 tsp
Garlic paste - 2 tsp
Cashew paste - 1/4 cup
Tumeric - 1/2tsp
Red chilli powder - 1.5tsp
Garam masala - 1.5tsp
Cumin powder - 1tsp
Coriander powder - 2 tsp
Kasoori Methi (crushed) - 1.5tsp
Cumin seeds - 1tsp
Oil - 2tbsp
Coriander leaves(chopped) -  1/4cup
Spring onion green(chopped) - 2 to 3 stalk
Salt

Method : -

 Heat oil in a non stick pan, add cinnamon and green cardamoms and sauté for ½ minute.
 Add cumin seeds to the pan and when they change colour, add onion and stir.
 Add spring onions and sauté for 1 minute. 
Chop green chillies and add along with ginger paste and garlic paste and mix well. 
Add tomato and stir. Add tomato puree and stir. 
Add turmeric powder, coriander powder and cumin powder and mix well. 
Add mushrooms and  peas - mix. 
Add salt, red chilli powder, cashewnut paste and ½ cup water and mix. Cover and cook for 2-3 minutes. Chop coriander leaves and add. 
Add kasoori methi and garam masala powder and mix well. 
Garnish with spring onion greens.


Serve hot with roti or parantha...Njoy!!!

3 ingredients Cookie

Yes a quick,easy n yummy cookie with just 3 ingredients...and its Healthy too..Guess i should call it Guiltfree


If you wish you can add other ingredients to this like for extra sweetness -sugar,raisins..nuts of ur choice..anything.

Oats - 1 cup
Ripe small banana - 2
Cinnamon powder - 1/4tsp
Raisins - a few (optional)

Method :-

Pre-heat oven 180°C.
In a bowl ,put oats followed by cinnamon powder.



 Add bananas and mash it using your hands;form a soft dough.



Line a baking tray with butter paper/aluminum foil.Make 8 balls out of the dough and slightly flatten it between your palm..place it carefully on the tray..keep distance between each cookie.(if you are using raisins to decorate then place them on the cookie and press it lightly with your fingers)


Place the tray in the center of oven and bake it for 15-18 min...If u want real crispy cookies then bake it for a few min more .

Njoy with your evening Tea/Coffee .

Note - If u don't want the taste of raw oats..then roast them for a few min.s in a pan ..cool and then use them.

Aloo-Shimla mirch Sabji

Easy n Yummy side dish..my style


Potatoes - 3 medium
Capsicum (green) - 2
Tumeric - 1/2tsp
Red chilli powder - 1 tsp
Salt
Hing - 1/4tsp
Cumin Seeds - 1/2tsp
Oil - 2tbsp

Method :-

Dice potatoes and capsicum.
Heat oil in a non-stick pan,crackle cumin seeds .
Add hing,diced potatoes and saute.Cook for a minute.
Add capsicum and saute.
Add the spices and salt,mix well.
Cover and cook till potatoes are soft n cooked.

Serve hot with roti/chapati...Njoy!!!

Oreo Truffles

Simplest sweet... that anybody can make,with just 3 ingredients...my son luved helping me in making these beauties ..Make as many as you want n you could even wrap them in foil or colored wraps n gift them to your buddies..do try !!!



Oreo Biscuits - 1 pkt
Fresh Cream(Malai) - 2 tbsp
Sugar - 2 tbsp (optional)
Cooking Chocolate - 150gm (brown)
Cooking chocolate - 50gm(white)- optional for decoration
Dessicated coconut - 4tbsp - optional for decoration

Method : -

Take out the biscuits from packet and put it in a blender and powder them.


Put the powdered biscuits in a bowl.
Whisk 2 tbsp cream in a small bowl..and add this to the powdered biscuits.Add sugar if you wish.


 Using your hands mix them together and knead into a soft dough.



Keep the dough in fridge for half an hour.Take out after half an hour and make small balls.

Keep the balls back in fridge for 1 hour.
Later take them out and keep aside.
Melt chocolate in a microwave for 2-3 min .(or melt them using double boiling method.

Roll and coat  the balls (one at a time) using fork in the melted chocolate.

Spread a butter paper/foil on a tray and keep the chocolate coated balls on the tray.

Leave it on room temp. or in fridge for 15-20 min till its set.
 Melt white chocolate and put it in a piping cone and decorate the truffles ..as desired.You can even decorate them using dessicated coconut .(i used milkmaid to decorate them..as i had no white chocolate)

I made 14 balls using just 1 pkt of oreo.

Note :- if using more packets of oreo then do not forget to double the cream also.
you can either coat the truffles using dark chocolate or white..your wish :) Keep experimenting !!

Zucchini Curry

A simple n quick dish to go along with chapati or rice...

Zucchini - 2
Onion - 1 (finely chopped)
Tomato - 2 (finely chopped or pureed)
Ginger garlic paste - 1 tbsp
Green Chillies - 2 (finely chopped)
Coriander-cumin powder - 1 tsp
Red Chilli powder - 1 tsp (or as needed)
Turmeric powder - 1/4 tsp
Garam Masala - 1/4 tsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/2 tsp
Cilantro/coriander leaves - for garnish
Salt - as needed
Hing - 1/2tsp (optional)- i used it
Oil - 2 tbsp

Method :-

Chop the zucchini into big chunks. Heat 1 tbsp of oil in a pan and shallow fry the pieces. Keep it aside.


Remove the zucchini pieces from the pan, add a tbsp of oil and crackle the mustard,cumin seeds n hing.
Saute the onions with the green chillies for 10 minutes until they turn nice golden brown.
Add the ginger- garlic paste and fry for a minute.
Add the tomato pieces/puree and let the mixture cook for atleast 10 minutes until the  tomatoes are pulpy.
Add all the dry spice powders- chilly powder, coriander-cumin powder , turmeric powder, garam masala powder and salt.
Add the zucchini pieces and required water. Bring the gravy to a boil .
Simmer the gravy till oil floats on top.
Garnish with Cilantro/Coriander leaves.remove from fire.
Serve hot with chapati/rice....

Note :-If desired you can even add 1/2 cup thick coconut milk ,just before removing it from fire.
