Roasted Veggies

A healthy side dish ....as seen on a show on NDTV GoodTimes...


Potatao - 2 (cut into wedges)
Onion - 2 (cubes)
Zuchini (green and yellow) - 1 each (cut into wedges)
Garlic - 5 cloves(sliced)
Cumin - 1 tsp
Black Pepper - 1 tsp
Thyme - 1 tsp
Oregano - 1 stp
Red chilli Powder - 1/2tsp
Olive Oil - 2 tbsp
Salt

Method:-
Pre-heat oven @ 190 Degree C .
Arrange all the ingredients in a baking dish.Pour olive oil over and bake for 20-25 min in the Oven...
Njoy!!

Chana dal Burfi

A Nestle Moment Recipe...

MILKMAID- ½ cup(100g)
Milk -3 cups (450ml)
Ghee ½ cup
Chana Dal (Bengal Gram Dal) -  100g
Water -500ml
Desiccated Coconut- ½ cup
Almonds- 10,chopped
Pista- 2 tbsp, chopped
Elaichi powder- 1 tsp

Method:
1. Soak the chana dal in the water and keep aside for 2-3 hrs.
 Strain off the water & cook the dal in 2 cups of  Milk till
soft, keep aside to cool. Grind the dal to a coarse paste.
2. Heat Ghee in a karahi, add the dal paste and fry stirring
continuously till the mixture is light brown. Add the MILKMAID and blend into the mixture, then add the remaining milk and cook
 till the mixture leaves the sides of the karahi.
3. Add the desiccated coconut, almonds, pista and elaichi powder and mix well.
Remove from fire and spread in a greased thali.
 Cool and slice into desired shape.

Broccoli Thoran/Stir fry

Broccoli - 1
Carrots - 1(medium,grated)
Curry Leaves - a few
Haldi - 1/4tsp
Salt
Oil - 2tbsp
Fresh (grounded)Black Pepper - 1 tsp
Coconut(shredded) - 2 tbsp/Kopra - 2 tbsp
Rai/Mustard seeds - 1/2tsp
Rice(grains) - 1 tsp

Method:-
  1. Separate broccoli florets from stem..boil them with haldi n a pinch of salt for 5 min.Drain and keep aside till it cools..then chop it.
  2. Heat oil in a kadai/pan,crackle rai , rice grains and curry leaves.
  3. Saute grated carrots for a minute n then add the boiled broccoli.Cook covered for 5 min.
  4. Add salt ,black pepper and mix well.Cook for 5 more minutes.
  5. Atlast add coconut/khopra..mix and remove from stove.
Serve with Rice...njoy!!

Veg Burger

Home made Veg burger...my style

Buns - 5 (market bought)
Potato - 3 (Big)Diced
Carrots - 2 (medium)Diced
Onion - 1 (medium) chopped
Coriander Leaves - 2 tbsp(chopped)
Ginger - 1" pc (grated)
Salt
Garam Masala - 2 tsp
Corn flour - 1 tbsp
Bread crumbs - 5 tbsp
Oil - for shallow frying
Mozarella cheese sheets - 5

Method: -
  1. Boil potatoes n carrots in a pan with a pinch of salt.Drain n keep aside.
  2. Once cool mash them using a fork or back of a spoon.
  3. In a non-stick pan saute onions n ginger in 1tsp oil/butter.
  4. Take a medium bowl,mix potaoes-carrots n sauted onion-ginger.
  5. Add salt,garam masala,cornflour n coriander leaves .
  6. Combine them using ur hands and make small tikkis.
  7. Coat d tikkis with bread crumbs.
  8. Shallow fry these tikkis in a non-stick pan..until brown n crispy .
  9. Cut the buns in half and heat them on a tawa.
  10. Place tikkis in between  d buns and place one sheet of mozarella sheet above d tikki.
Serve hot with Ketchup n Coffee/Chai..as evening snack....NJOY!!!

note:- for this particular tikkis..i didn't use bread crumbs..still thy tasted yummmm..if u wish u can delete bread crumbs.

Parippu Vada/Chanadal Vada

Yummy Kerala snack...my mom makes delicious vadas..i miss them...

Chana dal - 1 cup (soaked for 2-3 hrs)
Onion(small) - 2
Green Chilli - 2
Ginger - 1 small pc
Curry leaves - a few
Hing - a pinch
Salt
Oil - for deep frying

Method:-
  1. Drain soaked dal and grind it in a mixer grinder using very less water.Keep it little grainy.
  2. Chop onions.grind half of the chopped onions with ginger and green chilli in the mixer grinder.
  3.  Mix dal mixture and onion mix,plus rest of the chopped onions.
  4. Add hing,salt and curry leaves to the batter,Batter should be little thick.
  5. Add little water if its too thick.
  6. Form into tikki and arrange on a tray.
  7. Heat oil in a kadai on medium flame.Fry vadas 4 or 5 at a time till golden brown.
Serve hot with Chutney of ur choice and a HOT cup of CHAIiii.... njoy!!!

Dahi Tadka

Simple,quick side dish for d Rice n Curd lovers..by Chef Sanjeev Kapoor



Yogurt - 2.5cups
Oil - 1 tbsp
Jeera - 1/2tsp
Green chilles - 2
Coriander leaves - 2 tbsp
Ginger paste - 1tsp
Haldi - 1/4tsp
Rcp - 1/4tsp
Coriander powder - 1/2tsp
Salt
Curry Leaves - 5

Method :-

Heat oil in a non-stick pan and add cumin seeds. 
Slit green chillies and finely chop coriander leaves.
Add ginger paste to the pan and sauté for a while. 
Add green chillies, reduce heat and add turmeric powder, red chilli powder, coriander powder and mix well. 
Add curry leaves, coriander leaves, salt and yogurt and switch off heat immediately. 
Mix well and serve immediately....Njoy!!!






Carrot Pudding(Gajar Halwa) - Microwave Version

U must hav tried d traditional version..come lets try d microwave version too...easy n quick..wait for 30 min n urTasty-Yummy Halwa is ready.


Carrots(grated) - 10
Ghee - 4 tbsp
Illachi pwder - 1/2 tsp
Milk - 1/2 cup
Sugar - 2 tbsp
Milkmaid - 1/2 tin (200 ml)
Nuts - Almonds/Pista/Cashew

Method :-

Heat a non-stick pan on stove and add ghee,carrots-saute for 5 min.
Take a microwave safe dish and add carrots,milk- cook for 10 min(microwave high).Stir and mix sugar.
Again cook for 10 min(on microwave high).When milk is almost absorbed..add milkmaid,illachi powder and mix properly.Cook for d last time for 10 min.
Take out and Garnish with nuts of ur choice.Serve Hot...Njoy!!!


Note: - For those who want to njoy d traditional n microwave versions together(for saving time)...simply cookghee,carrots n milk in microwave for 10-15 min..once they r soft..shift it to a karahi and add rest of d ingredients, cook till milk fully dries up..

Gajar Ka Halwa(Carrot Pudding)

Gajar Halwa d traditional way...Winters without dis divine halwa...Unthinkable for me n my family..



Carrots(grated) - 1 kg
Ghee - 1/2 cup
Milk(full cream) - as required
Illachi  - 1tsp (freshly crushed)
Sugar - 1 cup (or more ,as per ur taste)
Nuts - 5 (almonds/Pista/Cashews)

Method:-

Heat ghee in a heavy bottomed karahi,add grated carrots and saute for 5 min.
Cover and let it cook for 10 min.
Add milk,just enough to cover the carrots.Cover again and cook till the milk is half absorbed.
Add sugar and mix properly.Let it cook till milk is fully absorbed,stirring in between.
When milk is fully vanished add illachi  and mix well.
Remove from stove and garnish with nuts of ur choice.

Serve Hot...njoy!!!

Note: - Traditional Karahi cooked halwa tastes Awesome..only thing it takes almost 1.5 - 2 hrs to cook..Thoda pain thoda gain :)...

Gulab Jamun

Soft,Moist,Juicy.....n above all MOUTH-WATERINggggg...

Dry milk Pwdr -1.5cups (i used NIDO )
Maida - 1 cup
Soda bi-carb -1/4tsp

Yogurt - 4tbsp(more/less)
Oil - for frying

For sugar syrup
Sugar - 2.5cups
Water - 3 cups
Illachi Pwdr - 1/2tsp(i divided equally both in syrup n dough)
Lemon Juice - a few drops(to avoid crystalisation)
Rose ess. - 1/2tsp (i used 1/4 tsp...felt 1/2tsp was too strong)

Method:-
Sift the milk pwdr,maida n Soda bi-carb.
Add yogurt n knead the flour mixture to form a soft dough.Cover n let it rest for half an hr.
Prepare sugar syurp.
Divide dough into 30 balls.Smooth out balls by applying ghee on ur palms.
Heat oil in a deep pan n fry the balls on low - medium flame,until Brown in color.
Soak in Warm sugar syrup for 30 min or more till jamuns soak in d syrup nicely.

Serve Hot...Njoy!!
NB :- i used Nido powder and faced a small problem on my first trial..the inner part of jamun didn't soak in d syrup..but 2nd trial it came out Super....try using any other brand....it will turn WOW...i bet u'll stop buying Gulab Jamun MIX :) :D

Nacho Triangles

Crispy chips with a desi twist...do try for diwali snacks


Maize flour - 1.5cups
Maida - 1 cup
Ajwain(Carrom seeds) - a pinch
Red chilli powder - 1 tsp
Salt - to taste
Oil - for frying
Water - as required

Method : -

Mix all the dry ingredients in a bowl.
Add water and knead into a soft dough,keep aside covered for half an hr.
Roll into thin chapati and cut it into 8 or more triangles..prick with fork.
Deep fry until crispy-brown.
Store in air-tight container ....

Njoy with Tomato Ketchup or any chutney of your choice..

P3 - Paneer peas Pulav



Paneer - 1 cup(cubed)
Peas - 2 cups
Basamti rice - 1 cup
Cloves - 5
Cardamom - 5
Cinnamon  - 1.5" pc
Bay Leaf - 2
Raisins - 10
Ghee - 2 tbsp
Water - 2 cups
Salt
Sugar - 1/2tsp

Method:-

Wash rice and soak in water for 1 hr.Drain and Keep aside.
Heat Ghee in a pan and fry paneer cubes till golden brown.Keep aside.
Now in the same ghee fry  all the spices and add rice and fry for 2-3 min.
Add Peas and raisins, fry for another 2 min.
Add water ,salt n sugar-Bring to boil,put on lid and reduce the flame to low...cook till the water is fully absorbed n rice is perfectly cooked.
Add the fried Paneer cubes and mix properly.

Serve Hot..with Raita of ur choice....Njoy!!!
