Unniyappam

Unniyappam 

Wanted to post dis recipe long back(last yr actually)..but couldn't...so finally now am ready...my family's(especially my Son's) all time fav. Kerala sweet snack(its actually a traditional hindu temple prasad)..am not vry gud at making these brown beauties..so i tuk my MOM's help..here's  her version...do try.
Mom making Unniyappams

Actual Unniyappam Pan

Rice Flour - 1 cup(roasted)
Suji -1 cup
Banana(ripe) - 4 to 6(mashed)
Gur/Jaggery - 1/2 cup (soak in water,boil and strain)
Salt - a pinch
Ghee - 1tbsp
Coconut(small slices) - 1/2cup
Coconut Oil - 2cups (if not available then use any other oil..but these appams taste best with coconut oil)

Method:-

Heat oil in a kadai,fry coconut slices.
In a bowl mix all the dry ingredients and Jaggery water.Keep aside for 20-30 min.
If the batter is too thick,pour little water.
Heat oil in deep Unniyappam Pan(or any pan) and pour a tablespoon of batter.Fry on a medium- low heat till its deep brown,drain on absorbent paper. Consume within 3-4 days.

Nankhatayi

Nankhatayi..call it Ghee Biscuit or Butter Cookies...:) a yum yummmm,soft yet crunchy Cookie,. i learnt many yrs back from luvly frnd-Gayathri,thnx dear!!...easy to make..do try.


Maida - 1 cup
Ghee/Butter - 1/2cup
Sugar(powdered) - 1/2cup

Bp - 1.5tsp
Vanilla ess. - 1/2tsp
Milk - 1 tbsp(optional)

Method:-

Sieve maida n bp twice.Mix butter and sugar with spatula then beat it using electric mixer(or ur own Mixcy),till the butter is fluffy.Add vanilla ess and mix again.Atlast add maida mix and knead into a soft dough..add milk if required(to combine).
Grease n dust a baking tray and make small balls out of dough and place them atleast 3 cm apart.Bake for 15-20 min in a pre-heated oven 150 degree C.
Reduce temp of oven to 120 degree C aft 5-7 min.Take it out wen u c light brown/golden color on top of cookie or wen d cookie gets those cracking lines on top.

Pepper Chicken

Simple , quick-Yummylious chicken dish... do try.

Chicken - 800gm (i used 8 drumstickes)
Onion - 1(big chopped)
Tomato - 1 (medium chopped)
Ginger-Garlic Paste - 2 tsp
Salt - to taste
Pepper - 2 tbsp(curshed /powdered)
Oil/Ghee - 2bsp
Lime juice - half a lime
Coriander leaves -to garnish
Spring Onion - to garnish

Method:-

  1. Wash and cut Chicken to desired size.If using drumsticks then just make a few small slits on all the drumsticks.
  2. Heat oil in a heavy-bottomed pan,fry onions till slightly brown.
  3. Add ginger garlic paste and tomatoes and fry for about 2-3 min.
  4. Add pepper,salt and fry for another min.
  5. Add the chicken pieces and add some water if required and mix well.
  6. Cover and cook on medium heat for about 12 minutes or till the chicken pieces are well cooked.
  7. If the chicken is not yet cooked and the gravy looks dry, add some more water little by little as required.
  8. Cover and cook on low heat till done.
Serve hot garnished with coriander leaves, spring onion and a sprinkling of freshly milled pepper and lime juice....njoy with Naan or Tandoori roti.

Marble Cake

Marble Cake

To celebrate my 100th post i thought of making Marble Cake...n am so happy that it came out Superbly soft n yummy....


Maida - 2 and 1/4 cup (sieve 3 times)
Butter - 200gm(room temp.)
Castor Sugar - 1.5cup
Soda bi carb - 1/4tsp
Vanilla ess. - 1 tsp
Cocoa powder - 4tbsp
Eggs - 4(room temp.)
Baking powder - 1tsp
Milk - 1/2cup (or more if needed)
Salt - a pinch
Curd - 4tbsp (beaten)

Method:-
  1. Preheat oven @ 180 degree C.
  2. Take a big bowl,put butter and castor sugar-mix using spatula,once its combined then beat it using an electric hand beater-till its fluffy.
  3. In another bowl,mix all dry ingredients (except cocoa powder) together.Keep aside.
  4. Mix vanilla ess. and curd to the butter mixture.combine well(slowly).
  5. Add eggs(one at a time).
  6. Add the dry ingredients(little by little) on slow speed.Add milk also .Mix properly..to avoid lumps..add extra milk if the batter is too thick.
  7. Divide the batter in 2 bowls.To one of the batter add cocoa powder and a little milk(if required),mix well.
  8. Take a greased 10" baking tin.Spoon each batter alternatively.
  9. Dap the tin on working floor-to level the batter.
  10. Use a skewer or a round thick stick to make pattern(of your choice) in the batter.{make spiral/star/zig-zag pattern}.
  11. Bake for 35-40 min.
Let it cool and then invert on serving plate.... njoy!!!!

Egg Puffs

This snack was(or i should say).. still is one of my favourite evening snack...i use to get dis in our hostel mess for our evening tea snack.Its easily avaialble in veg/non-veg. form @ any  kerala coffee/tea shops or bakery.

The actual version is made from puff pastery ,but here am trying sumthg new n different...as v don't get puff pastry sheets here :(

For Dough-the preparation is  same as Pizza dough(click to chk).
Makes - 8 puffs
For Stuffing:
Onion- 2 large (sliced )
Eggs – 4 (boiled and cut into half )
Curry leaves – 1 sprig
Chilli Powder -1 tsp
Garam Masala - 1tsp
Salt to taste
Oil- 1 tbsp
Coriander Leaves - 1 tbsp


Method:

Prepare the dough and keep it aside for 1 hr.Let it rise and double in size.
For filling-Heat oil in a pan and saute onions,curry leaves.Put the lid on and cook till onions are slightly brown.
Add chilli powder,garam masala and salt and mix well.Atlast add coriander leaves.Take out in a bowl and let it cool.
Take the dough and pat it using ur fist(to release extra air).Divide into equal sized balls and roll into thick puri.
Spread the onion filling and egg(flat side down) in the center and fold from all sides.Repeat the process till the dough and filling finishes.
Arrange it in a baking tray and cover with a cloth and let it rise for 15-20 mins.


In that resting time you switch on the oven and heat it @ 200 degree C.Bake the Puffs for 30-40 min.
Serve them hot with a splash of ghee/Butter on top along with hot Tea/Coffee.



Nb:-For those who are using pastry sheets,please cut the sheet into equal squares and fill them with onion filling and egg and close all four sides and bake(same as above method).
