Home made Ghee/Clarified Butter/Nei

And for my 150 th post here is a Simple,quick process to prepare Ghee at home using fresh cream/malai....


Fresh Cream -
Cold Water - 1 to 1.5 cups

Method :-

Keep the cream container out of fridge for half an hour.
Pour the cream and 1 cup cold water in a blender and blend it for 2-3 min.You will notice butter n buttermilk will separate.
 Using a spoon or your hands take out butter into a kadai or pan.Keep the buttermilk in different bowl..use it in cooking or baking or just make lassi :)

 Turn the heat on and let the butter melt on slow/low heat.


Once it starts getting bubbles..stir it..As soon as you see light golden/brown color sediments,switch off the heat.
 Strain the ghee using a metal strainer.

Here's freshly prepared ghee/nei.



Cool at room temp. and store it in a bottle/can..Njoy!!

Note : - If preparing ghee during winter use lukewarm water instead of cold water..

Healthy Fat Substitutions

Though we all feared fat for years, believing it to be the cause of our own growing fat, new research and trends in diets have shown that healthy fats are actually quite necessary for a healthy diet -- and even for a trimmer waistline. Instead of trying to find ways to make recipes have fewer fats in them, by substituting items such as applesauce or black beans for the butter and eggs in the recipes, we should be focusing instead on how to replace unhealthy fats with healthy ones.

Some unhealthy fat choices include:
  • Margarine
  • Vegetable oil
  • Palm kernel oil
  • Canola oil
These oils have unhealthy fats like trans fats and saturated fats, and they are low in nutrients. They are also highly processed.
You can make a recipe healthier by choosing some of these quality fat alternatives instead:

Coconut Oil
Coconut oil had a bad rap for a long time because it's a saturated fat. However, unlike other saturated fats, coconut oil has medium-chain fatty acids, which have been shown to help you increase your metabolism and burn more calories. Coconut oil has also been shown to lower your cholesterol and to fight off infection and illness.
Coconut oil is solid at room temperature. You can use it like butter in recipes, or you can heat it to use it like oil in recipes. You may notice a slight coconuty flavor, but for the most part, you won't notice a change in taste.

Avocado
Avocado is loaded with nutritional benefits, such as high levels of beta carotene and Vitamins A, D, and E. It also has high amounts of monounsaturated and polyunsaturated fats, which are good for your heart health and can help to reduce your risk of cancer.
Avocado is a great addition to salads, sandwiches and stir fries. If you want to cook or bake with it, you will need to experiment with substitutions. You can even buy avocado oil that can be used in place of other oils when cooking.

Flaxseed Oil
Flaxseeds are a valuable source of fiber and Omega-3 fatty acids, which contribute to heart health and can improve your metabolism. The oil doesn't have the fiber, but it does have the other nutritional benefits.
You can use flaxseed oil as a 1-to-1 replacement in just about any recipe. The dish may take on a darker color and have a more distinct flavor. Experiment to find what works best for you.

Hemp Oil
Hemp oil has a slightly nutty and smoky flavor that is delicious. It's also loaded with nutrients, such as linoleic acid and other essential fatty acids, which can lower the risk of heart problems. Like with flaxseed oil, you can use hemp oil 1-to-1 in recipes, but you may notice a difference in the flavor. As always, experiment to find what works best for your preferences.
Finding ways to reduce fat in dishes isn't always the best way to make a dish more healthy. In many cases, you simply need to choose healthier fats. These oils are great choices for making over a dish to provide more health benefits.

Tomato Chutney

A simple chutney to go with your dosa or chapati..do try!!


Tomato(large) - 3
Onion (large) - 1
Garlic - 3 cloves
Green Chilli - 1 (sliced)
Curry Leaves - 1 sprig
Mustard seeds - 1/2tsp
Oil - 1 tbsp
Red chilli powder - 1 tsp (adjust to your spice level)
Tumeric - 1/4tsp
Sugar - a pinch (optional)
Salt

Method :-

Heat oil in a pan,crackle mustard seeds,curry leaves.
Add garlic n saute for a few seconds..do not let it burn or change its color.
Add onions,green chillies n saute till onion's light pinkish in color.
Add tomatoes,salt and all the spices,
Cover n cook till tomatoes are soft .
Sprinkle a pinch sugar if desired.

Paapdi Chaat

इस बारिश  के मौसम  में (in  tanzania ),शाम  की चाय  के साथ कुछ  चटपटा  तो  मंगता  है ...here is my simple n quick version

पापड़ी चाट 


Serves - 6 to 7 people

Sev - 250gm
Murmure - 150gm
Mathari - 10 pc
Curd - 250ml
Salt
Red chilli powder - a few pinch
Cumin powder - a few pinch
Sugar - 2tsp
Imli Chutney - 2-3tbsp
Rock salt(kala namak) - a few pinch

Method:-

Take a wide plastic or glass bowl,add sev -murmure.
Break the mathari roughly and add to the above mix.
In another bowl,beat curd with a pinch of rock salt n sugar.

Take 6 small serving bowls and add the sev mix,pour lil curd-top it with a pinch each of red chilli powder and cumin powder and atlast pour  Imli chutney(or any other chutney of ur choice).

Imli-Khajoor Chutney

A sweet n spicy Tamarind-Dates Chutney...my simple version



Tamarind(Imli) - 500gm
Dates(de-seeded)- 10
Tumeric - 1 tsp
Red chilli powder - 1 tsp (adjust to ur spice level)
Salt
Jaggery - 1/2 cup (roughly grated/broken)
Sugar - 2 tbsp
Water -as needed

Method: -

Soak tamarind in 2 cups- lukewarm water for 1-2 hrs.Squeeze out the pulp and discard the skin n seeds of tamarind.
Chop dates roughly.
Take a deep pan,add tamarind pulp  and let it boil .Once it starts boiling add jaggery n  date pieces.
Boil this mix till it becomes thick in consistency..at this stage add all other ingredients  and stir well.

If the chutney is too thick ..add little water .Turn off heat and let it cool on room temp.

Store in an airtight glass bottle in fridge.
Keep it out for half an hour before serving....Njoy!!!

Eggless Choco-Banana Cake n Muffins

The other day my son "Ordered"me to make sumthg Healthy n vry Yummy for him with bananas n choco...wondering what to do..i thought to make these easy,eggless beauties..

Choco-banana Muffins
 Wheat Flour(aata) - 1.5cups
Cocoa Powder - 3 tbsp
Baking Soda - 1 tsp
Water - 1 cup
Sugar - 1 cup
Vanilla ess. - 1 tsp
Olive oil(or any other cooking oil) - 1/2cup
Salt - a pinch
Vinegar /Lemon juice - 1 tbsp
Small Banana - 2

Method:-

Sieve Wheat flour,baking soda and cocoa powder ..thrice and keep aside.
In a wide bowl ,pour water-add sugar and mix it properly till sugar is fully dissolved.
Add vinegar/lemon juice..later add oil,vanilla ess. n salt..mix well.
Now add flour mix and combine carefully..there should be no lumps.
Blend both bananas in a mixer grinder to a fine paste/puree.Add this to the above cake mix and combine everything properly.

Pre-heat oven to 180 degree C.
Pour this cake mix in a greased cake tin and bake for 35-40 min
And if u want to make muffin then line paper cups in muffin tray and pour this cake mix(fill it 3/4th level) and bake them for 15-20 min

Soya Chunk Manchurian

A Mouth-Watering dish ...Chef Sanjeev Kapoor ji's Style

Here i have changed the original recipe a lil bit..i omitted a few items(mainly coz i ran out of stock :p)but still making these changes didn't change the yumminess of this dish...

These shallow fried Soya chunks could be served as Starters also...cool na.. :D


Soya Chunks - 1 cup(soaked n drained)
Cornflour - 4tsp
Green Chilli Paste - 1/2tbsp
Dark Soy Sauce - 2tsp
Oil - 1 tbsp
Onion - 2 medium(chopped)
Spring Onion - 1 or 2 (chopped)
Ginger - 1"pc(chopped)
Garlic - 3 cloves (chopped)
Soy Sauce - 3tsp
Chilli Sauce - 1 tbsp (i used Maggie Hot chilli sauce)
Tomato Ketchup - 2tbsp
Salt
Capsicum - 1 small(diced)
Vinegar - 1 tbsp
Spring Onion greens - 4 to 5 stalks(finely chopped)

Method :-

Mix soya chunks,salt,2 tsp cornflour,green chilli paste and dark soy sauce in a bowl.
Heat 1/2tbsp oil in a pan and saute these soya chunks for 2-3 mins..tll light brown crispy coating forms.
Transfer these fried chunks in another bowl.Keep aside.
Heat remaining 1/2tbsp oil in the same pan,saute onions,spring onion,ginger and garlic for 2-3min.
Add soy sauce,chilli sauce n tomato ketchup and mix well.
Add 2 cups water and let the mixture boil.
Add the soya chunks and let it cook for 5 min.
Check salt..if required add a little bit.
Dissolve remaining 2 tsp cornflour in 2 tbsp water..add this mixture to the pan and cook till the grvay becomes thick.
Add capsicum,stir in vinegar..mix well .Take it off the heat.

Garnish with spring onion greens.


Serve hot with fried rice or noodles....NJOY.... :))

Cabbage/Patta Gobhi ki Sabji

My Mom prepares this Yummy n vry simple dish with Chapati...


Shredded Cabbage - 3 cups(or half of a medium sized cabbage)
Toamato - 2 (sliced)
Green Chilly - 2 (sliced)
Mustard seeds - 1/2tsp
Tumeric - 1/2tsp
Red chilli powder - 1/2tsp
Salt
Curry Leaves - 1 sprig
Oil - 2 tbsp

Method :-

Heat oil in a pan,crackle mustard seeds n curry leaves.
Add Green chillies n shredded cabbage and saute it for a minute.
Put the lid on and let it cook for 5 -10 min..till cabbage is half done.
Now add tumeric,red chilli powder and salt.Mix well.
Add tomatoes and mix well..put the lid again n cook till tomatoes are soft.

Njoy it hot with Chapati ....

Puttu/Steamed Cake

A yummy n easy Kerala breakfast item..could be made from Rice flour/Wheat flour/Raagi flour and Maize flour ....my family's fav is Maize flour one :)),which is very very easily available here in Tanzania(one of main cultivation here).

Cholam puttu/Maize Steamed Cake
Maize flour - 2 cups
Water - as required
Salt
Grated Coconut - 1 cup

Method :-

maize flour n salt
moist maize flour










Roast maize flour..till you get that sweet aroma..do not change color.Keep aside and let it cool.
Pour water in a puttu pot and let it boil on medium heat.
Take a bowl ,put the cooled maize flour into it..add salt.
Take water in a glass and add little water at a time and using your hands..crumble the flour.(flour should be moist ..not dry)

 Now take 1 tbsp of grated coconut and drop it in the puttu maker followed by 3 tbsp of prepared maize flour mix then again 1 tbsp of coconut and again 2 tbsp of maize..fill it alternatively till you reach to the top.Put on the lid.

Place it on the pot(where water is boiling)..steam cook it for 10 min or until you see steam escaping thru the lid.Njoy it with Kadla Curry/Chickpea curry or sugar n Banana :)

If you don't hav the puttu maker ..you can prepare it in your idli sanchas..just drop lil coconut in sanchas and then moist maize flour and steam cook for a few min :))

Same process you can prepare any type of puttu..rice/raagi/wheat...

Kale Chane /Kadla Curry/ Chickpea Curry



Chickpea - 2 cups (washed and soaked overnight)
Onion - 2 medium(sliced)
Tomato - 1 big(sliced)
Ginger - 1 small pc (crushed)
Coconut - 1/4cup (thinly chopped)
Coriander Leaves - a few
Tumeric - 1/2tsp + 1/2tsp
Red chilli Powder - 1 tsp
Garam Masala - 1 to 2 tsp
Coriander Powder - 2 tsp
Salt
Cinnamon stick - 1
Star Anise - 2
Mustard seeds - 1 tsp
Water - as required
Curry Leaves - 1 sprig

Method : -
  1. Pressure cook chickpeas ,chopped coconut,cinnamon,star anise,little salt and 1/2tsp tumeric with enough water(almost 5-7 whistles).
  2. Heat oil in a deep pan,crackle mustard seeds n curry leaves.
  3. Saute sliced onions..when it starts changing color add ginger and saute.
  4. When onions are golden brown add 1/2tsp tumeric,red chilli powder,garam masala n coriander powder.
  5. Add salt and sliced tomato..cook till tomatoes are soft.
  6. Empty the contents from pressure cooker into the pan ..mix well.
  7. Add more water ..if required..Cover and let it boil on slow heat.
Remove from fire ..Garnish with coriander leaves ..

Serve hot with Rice or puri or Puttu(Steamed Rice Cake)
