Masala Soya - Kerala style

You need

Soya chunks - 2 cups
Onion(sliced)-2 medium
Garlic(sliced) - 6 or 7
Coconut(thinly sliced)- 1 tbsp
Curry leaves- a few
Meat masala- 2 tsp
Tumeric- 1/2 tsp
Red chilli powder - 1 tsp
Black pepper- 1/2tsp(optional)
Coriander powder- 1 tsp
Salt
Oil- 2 tsp
Mustard seeds- 1/2 tsp
Hing - a pinch

Method:-

1.Boil water in a saucepan,add souya chunks and leave it  for 15 min.s
2.After 15 min.s drain and squeeze out water from the chunks..keep it aside.
3.Heat a wok and dry roast 1 tsp meat masala n pepper later add the chunks and mix them well..take out of wok and keep it aside.
4. In the same wok,heat oil now.Crackle the mustard seeds ,add hing.,followed by coconut slices and curry leaves.
5.Once the coconut is slight golden in color add the garlic n onions...saute n cook on low flame until onions r light brown in color..add the remaining masalas n mix well.
6.Now u can add the soya chunks.Cook for 5 to 10 min.s on low flame.

Your yummy Masala Soya -side dish is ready...Serve hot with rice.

Aloo Bonda



For filling

Boiled potatos - 3 (medium)
Chopped Onion - 1 (medium)
White/brown Bread slices - 3
Green chilli - 1 ( finely chopped)  * optional
Ginger - 1" (grated)
Haldi - 1/2 tsp
Red chilli powder - 1/2tsp
Coriander leaves chopped - 2 tbsp
Salt

For Batter

Besan - 5 tbsp
Ajwain - 1/4 tsp
Salt
Hing - a pinch
Water- as required

Oil- for frying


Method : -


  1. In a bowl mash boiled potatos .Add chopped onions,green chillies/red chilli powder,haldi,salt,ginger,coriander leaves.
  2. Make lemon size bonda  balls and place in a plate.{I was able to make 15 bonda balls}.
  3. Prepare a semi-thick batter using besan,salt,hing,ajwain and water.
  4. Heat oil in a kadai.
  5. Dip the bonda balls in the batter and deep fry until little brown on medium flame.
  6. Fry only 4 or 5 bondas at a time.
Serve them hot with green chutney or ketchup.

Dal Palak

Back to blog after a loooong gap with a mouthwatering recipe....simple ,quick recipe Sanjeev Kapoor ji 's style .Do try.


Ingredients -

Spinach - 15 to 20 leaves
Moong dal(dhuli) - 3/4 cup
Haldi - 1/2 tsp
Hing - a pinch
Oil/ ghee - 1 tbsp
Cumin -1 tsp
Garlic (chopped) - 6 to 8 cloves
Ginger(chopped) - 1"
Green chilli ( chopped) - 2
Onion(chopped) - 1 medium
Salt
Lemon juice

Method : -

1.Cook dal with half the haldi and hing.
2. Heat oil /ghee in a kadai.
3.Add cumin,garlic,ginger,chilli and saute for 1 min.
4.Add onion and continue to saute till onion gets lightly browned.
5.Add spinach and saute for 1/2 a min .Add the remaining haldi and stir.Add dal and mix well.
6.Add 1 cup water and salt and stir.
  Add lemon juice  just before serving.

Sabudana (Sago) Tikki

Easy,Crunchy n yummy snack..



Sabudana(Sago) - 1 cup
Potato (boiled) - 2  (big)
Ginger - 1 small piece(grated)
Chaat Masala - 1/2tsp
Red Chilli Powder - 1/2tsp
Corn Flour - 2 tbsp
Salt
Coriander fresh - 1 tbsp(chopped)
Oil - for shallow Frying



Method : -
  1. Soak  Sabudana for 2 - 3 hrs .
  2. Boil potatoes n drain water...cool them .
  3. Mash the potatoes,add grated ginger-red chilli powder-chaat masala-salt,coriander leaves and corn flour.
  4. Mix well..check the salt.
  5. Drain sabudana and add to the potato mix,combine well.
  6. Make small size patties and arrange in a tray.
  7. Heat oil in a flat bottomed pan.
  8. Shallow fry these patties/tikkis..till crispy brown on both sides.
  9. Serve hot with chutney or ketchup.

Creamy Pumpkin Soup

Hello frnds..Its been a while since i experimented anything new in my Rasoi..coz i was totally occupied with my business..yes i hav started my Online Clothing Store on Facebook,pls do have a look by clicking - Rad's Wardrobe ..



Last week,got big ,fresh Pumpkins from my garden..was wondering what to do with so many pumpkins..so thought to turn it into a Soup...Vry vry Happy with the result.. :) :D



Pumpkin (medium) - take half of that pumpkin or 4 cups cubes
Chicken stock/Vegetable Stock - 6 cups
Salt - 1.5tsp
Black Pepper - 5 (whole) or 3/4tsp (if using powder)
Garlic - 1 to 2 cloves
Onion (medium) - 1
Fresh Thyme or dry thyme - 1/2 tsp
Oregano - 1/2tsp
Parsley leaves - 1 tsp  (i used fresh coriander leaves - a few)
Heavy Whipping Cream - 1/2 cup { i replaced it with Fresh cream/Malai - 4tbsp(beaten)}

Method :-
  1. Cut pumpkin in cubes,put it in a pressure cooker.
  2. Crush garlic and add it to the pressure cooker along with salt,fresh thyme,oregano,black pepper and stock.
  3. Pressure cook for 2-3 whistles.
  4. Wait till the pressure goes away completely.
  5. Open the pressure cooker and using hand blender,blend it to puree.
  6. Boil the puree for 5 more min.s
  7. Remove from fire .
  8. Add beaten whipping cream or fresh malai.
  9. Garnish wit chopped parsley or coriander leaves.
Serve hot...Njoy !!!
